Conch Salad

At the Junkanoo street party in the Bahamas we witnessed a local woman from Exuma creating this delicious salad. Traditional fresh & tasty – the best kind of food for travellers who enjoy sampling local dishes.

A mixture of finely diced conch, tomatoes, red onions, Scotch bonnets, bell peppers, celery, lemon, lime & orange juice and herbs all thrown into her white pickle bucket – she gave it a good mix and used a plastic cup to scoop up this fresh, delicious and colourful salad for me to try. Amazing!

I found this recipe online and can’t wait to recreate at home:

INGREDIENTS

  • 1 pound cleaned fresh conch, diced  (could substitute lobster)
  • 1/4 cup fresh orange juice
  • 2 tablespoons fresh lime juice
  • 2 tablespoons fresh lemon juice
  • 1 jalapeño pepper, stemmed, seeded and minced
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon salt
  • 1/2  Cucumber, peeled and minced
  • 1/2 yellow bell pepper, minced
  • 1/2 red bell pepper, minced
  • 1/4 red onion, minced
  • 1/2 cup diced fresh tomato
